Tomato Pie

This recipe was discovered at the Recipe Book Online.com website.

  • 1 9-inch pie crust, unbaked
  • 2-3 tomatoes, sliced
  • 1/4 tsp. chives, basil, salt, pepper (or spices of your choice)
  • 1/4 c. mayonnaise
  • 1 c. cheddar cheese, shredded

Preheat oven to 425°F.

Follow directions for baking pie crust, but only bake for 5 minutes. Remove from oven. Reduce heat to 400°F.

Line the bottom of pie crust with tomato slices. Sprinkle on spices.

In bowl, mix mayonnaise and cheese. Spread evenly over the tomato slices, covering all the edges (like putting on icing).

Bake 35 minutes. Serve at once while still hot and bubbling.

Makes 4-6 servings.
