My Mom's Sweet Potato Pie

(Personally Tested by the Prudent Cook)

This is the only way I will eat sweet potatoes.

  • 3 sweet potatoes, cooked and mashed (or 3 small cans)
  • 1 c. sugar
  • 1/2 tsp. salt
  • 2 eggs
  • 1/3 stick margarine, melted
  • 1/2 c. milk
  • 1 tsp. vanilla

Preheat oven to 400°F. Mix first 7 ingredients with mixer. Pour into a greased or Pam'd 9x9 casserole dish. Bake for 20-30 min. til firm. Remove from oven and sprinkle with topping.


Topping:

  • 1/3 c. brown sugar
  • 1/3 c. flour
  • 1 c. chopped pecans
  • 1/3 stick margarine

Mix sugar and flour, cut in the margarine. Stir in pecans. Sprinkle on top, return to oven for 10 minutes.
