My Mom's Sweet Potato Pie
(Personally Tested by the Prudent Cook)
This is the only way I will eat sweet potatoes.
- 3 sweet potatoes, cooked and mashed (or 3 small cans)
- 1 c. sugar
- 1/2 tsp. salt
- 2 eggs
- 1/3 stick margarine, melted
- 1/2 c. milk
- 1 tsp. vanilla
Preheat oven to 400°F.
Mix first 7 ingredients with mixer. Pour into a greased or Pam'd 9x9 casserole dish. Bake
for 20-30 min. til firm. Remove from oven and sprinkle with topping.
Topping:
- 1/3 c. brown sugar
- 1/3 c. flour
- 1 c. chopped pecans
- 1/3 stick margarine
Mix sugar and flour, cut in the margarine. Stir in pecans. Sprinkle on top, return to oven
for 10 minutes.
