Burger Stuffed Vidalias

  • 6 lg. Vidalia Sweet onions
  • 2 Tbsp. vegetable oil
  • 1 lb. lean ground beef
  • 2 Tbsp. bell pepper, chopped
  • 2 Tbsp. dry bread crumbs
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3 slices American cheese
  • 1 8-oz. can tomato sauce

Preheat oven to 350°F. Peel onions and cook in boiling salted water until tender. Drain and cool. Slice off top 1/3 of each onion. Scoop out centers to make cups. Chop 1/2 cup of centers and saute in oil along with beef and peppers for 5 minutes. Mix in crumbs, chili powder, salt, and pepper. Fill onion cups with mixture and place in a shallow baking dish. Top each with 1/2 slice of the cheese cut into a triangular shape. Pour the tomato sauce on top and bake for 30 minutes, occasionally basting onions with sauce. If desired, a small amount of tomato sauce can be put on top of the meat before adding cheese and then the remainder of tomato sauce on top of cheese.
