Red Beans and Rice

I think of this as the "Classic" recipe because it is as simple as can be.

  • 1 can (abt 14-oz.) stewed tomatoes, undrained
  • 1 can (abt 15-oz) beans, red or kidney
  • 1 c. white rice, uncooked
  • 1-3/4 c. water
  • 2 Tbsp. chili powder (adjust to taste)

Combine all ingredients in a 2-qt. heavy saucepan. Bring to a boil. Cover and reduce heat; simmer 15 minutes. Let stand, covered, for 5 minutes. Stir before serving.

Makes 4-6 servings.
