Potato Salad No-Mayo

This recipe was discovered at Just Tell Me What To Cook.

  • 14 small new red potatoes
  • 6 Tbsp. green onions, chopped
  • 4 Tbsp. red onion, finely chopped
  • 3 Tbsp. fresh parsley, chopped
  • 2 tsp. dried dill
  • 1 large red bell pepper, seeded, chopped
  • 3/4 c. olive oil
  • 1/3 c. red wine vinegar
  • 1 garlic clove, crushed
  • pepper, to taste

Scrub the potatoes. Boil until just tender, then drain. Cut in halves. Transfer to a large bowl and allow to cool for 5 minutes.

Add onions, herbs, and bell pepper to the potatoes. In a separate bowl, combine olive oil, vinegar, garlic and pepper. Pour enough of this dressing over the potato mixture to coat lightly. Toss gently until all ingredients are coated with dressing.

Chill completely and keep cold.

Great for picnics because it has no mayonnaise.
