Potato Dippin' Chips

  • 5-8 good-sized potatoes
  • 4-5 Tbsp. vegetable or olive oil
  • white or black ground pepper to season
  • 2 tsp. chopped garlic (use garlic in soy oil if available)
  • Add various dry and ground herbs to season.

Preheat oven to 400°F. Slice potatoes into pinkie finger-sized slices.

Then add olive or vegetable oil to coat potato slices. Add dried herbs, chopped garlic, and pepper to taste and mix well. Mix until all potato slices are uniformly coated with ingredients. Arrange slices on two baking pans.

Bake for 20-30 minutes to suit eating style. Turn slices every five minutes until done to taste preference. This is important for best tasting potatoes. After 15-20 minutes of baking and turning slices, reduce heat to 350 degrees. Take out potaoes and place in large bowl for a feast.

Prepare mixture of catsup and tabasco sauce or any other concoction you may like to dip the potato slices in! Bon Appetito!
