My Mom's Oven-Fried Chicken

(Personally Tested by the Prudent Cook)

Mom and I created this recipe years ago when my Dad was a trucker. During his brief stops in town, he wanted something hot and quick that traveled well, too.

  • boneless, skinless chicken breast
  • sour cream or plain yogurt
  • Italian-seasoned bread crumbs
  • vegetable cooking oil, margarine or butter

Preheat oven to 350°F. Lightly grease a large baking sheet or 13x9 pan. Put the sour cream in a shallow dish. Put the bread crumbs into another shallow dish. Coat each piece of chicken with sour cream, then roll it around in the crumbs until completely covered. Place on baking sheet. Continue with all pieces of chicken. If there's a lot of crumbs left over, sprinkle on top of the chicken. Drizzle lightly with oil. Bake 25-30 minutes until chicken is thoroughly cooked.

The seasoned bread crumbs can be replaced with regular bread crumbs and

  • season salt (not too much),
  • poultry seasoning,
  • paprika, and/or
  • garlic powder.

Basically, this recipe works well with whatever you have on hand.
