Chocolate Truffles

- 10 oz. semisweet chocolate
- 3 egg yolks
- 3-1/2 Tbsp. heavy cream
- 2-1/2 Tbsp. anisette liqueur
- 2 oz. unsalted butter, softened
- Cocoa, for dusting
In the top of a double boiler, melt the chocolate over simmering water.
Remove from heat and add the egg yolks. Whisk until smooth. Add
the cream, a tablespoon at a time. Whisk until smooth. Add the anisette
and whisk until smooth. Place back over hot water to heat through. When
warm, whisk in the butter, a tablespoon at a time. Refrigerate until firm.
Roll into small balls and dust with cocoa.
Makes about 30.
