Chocoscotch Chippies

chocolate butterscotch chip cookies

(Personally Tested by the Prudent Cook)

This recipe was discovered by accident but quickly became a big hit.

  • 1-1/2 c. butter-flavored shortening or margarine
  • 2 c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 c. flour
  • 3/4 c. unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 c. butterscotch chips

Preheat oven to 350°F. In a large bowl, cream together shortening and sugar. Mix in eggs and vanilla. In separate bowl, combine flour, cocoa, baking soda and salt. Slowly mix this into the shortening mixture. Mix in butterscotch chips. Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8-10 minutes. Allow to cool for a minute or two on cookie sheet before placing the cookies on wire racks to cool completely.

Makes about 5 dozen cookies.
